Behind the brand: Nicolas & his father, with their two Chinese partners

Confee is the story of a man accompanied by his father and their two respective Chinese friends, who after working many years in the fashion industry decided to re-start from scratch in Zhongshan, Guangdong province. Until this « recent » fashion industry experience, Nicolas’s father was an artisan butcher, a profession passed down from father to son for three generations in France.
Nicolas, therefore, learned everything from his father, with whom he created recipe after recipe, what has become a real institution in the artisanal gastronomic landscape in China.

1- Sausages
Summer is here and if the idea of organizing a barbecue cross your mind, you shouldn’t miss Confee’s sausages
All the sausages are delicious and remind me of my childhood and the artisan butcher from whom my grandparents would buy sausages for barbecues.

Many flavours allow you to diversify your barbecue parties: merguez, Moroccan kefta, Thai sausage (with lemongrass aftertaste), curry sausage or the premium “truffle and cheese” chicken sausage.

Forget the regular industrial sausage, stuffed with nitrates, dyes, preservatives and stabilizers. Nicolas makes a point of delivering an artisan sausage, with these ingredients only: meat (Guanxi black pigs, inner-Mongolian lamb or chicken), salt, pepper, spices when the recipe contains some, and that’s it!

My recommendation? Curry sausage and plain chipolata, with a tomato and basil salad, a hint of mustard, and a bottle of rosé. The ideal summer lunch on the terrace with friends, the smell of grilling meat floating in the air.

2- Duck confit and duck breast
Confee works with a supplier of fat-ducks for its foie gras, duck breast and duck confit. Confit de Canard is a flagship product not to be missed, and is of a remarkable simplicity to prepare at home: take it out of its packaging, reserve the duck fat to cook your potatoes and simply put the duck leg in the oven for about fifteen minutes to warm it up and especially… give the skin this indispensable crispiness!



The recipe involves a long cooking time for the duck leg, being immersed in its natural fat! The meat will then get “confit-ed”, and will become stringy and melting. It is an emblematic dish of French traditional cuisine.
3- Cold cut platter: Chorizo, dry-sausage, dried duck breast, duck paté
Another French classic, to be served as an aperitif with a couple of friends: the cold-cut board. It is usually composed of an assortment of dried/smoked meats, pickles, sometimes cheese, a baguette of bread and of course… wine!
It is a moment of sharing and conviviality, but also a gastronomic delight.

At Confee, there is no chance you don’t find something for you:
The dried duck-breast (only one in China that I know of) is sprinkled with herbs from Provence, a subtle mix of enriched flavours and melting texture.
The dry sausage is another flagship item, with the Chorizo, this Spanish red dry sausage with spices. Those two are not to be missed but what I prefer above all are the pâtés and terrines.

The Duck rillettes spread like butter, the taste of duck is there but not too powerful either. With my pickles, it’s the perfect combination!



Conclusion
Confee is a brand that does not cheat with quality. It is very popular within the French community who, like me, takes great pleasure in finding products from home here in China.

It is also a brand well established in China: they use high-quality Chinese ingredients, combined with traditional French techniques and research on recipes to offer compatible products with Chinese domestic cuisine.
I see more and more brand eager to deliver quality in China, which promise me more materials for my “Made in China” articles.
